Trader Joe's Vanilla Cake Mix: Yummy Train Cake!



Oh, good ol' Trader Joe's! Today, I found a great all natural vanilla cake mix and it was the perfect time to experiment with a train cake mold.


I really wanted to make this cake from scratch, but I just didn't have the time today to measure everything out and get out the mixer. So, I took some help from Trader Joe's and oh, am I glad I did! This is a really yummy tasting vanilla cake and you can actually see the flecks of vanilla bean throughout the cake! It's all natural too, so there's none of that nasty partially hydrogenated oil in there! YEAH!!! A victorious cake mix, at last!!!!


So this is how the train cake came out. Isn't it cute? There are nine little molds in different train car shapes, including the locomotive, coal cars, hoppers and freight cars. VERY CUTE! I'm so excited with how it turned out and this was the perfect amount of cake mix to fill all the train car molds! I can't wait to try this cake mold out with corn bread and other cake recipes! I wonder if it would work with banana bread or pumpkin bread...?


Josh just had a blast eating his locomotive for dessert--he couldn't finish it, of course, but he took a few bites and said it was good. Now, the possibilities are endless with this cake mold. No frosting required either for this cake mix--it's good all by itself! I know I didn't have time to decorate it quite elaborately as the one shown below, but maybe someday...

  1. How cute, Mar! I can just see Josh's excited face when he got to eat his train cake. Where did you find the molds?

    I'm happy to know TJ's cake mix doesn't have that nasty partially hydrogenated oil. Trader Joe's just rocks! I'll have to try the cake mix too.

  2. Amy, Now, that I know how it turns out, I'll have to have you and Aidan over to try some! We certainly can't eat 9 train cars by ourselves! I am going to experiment with some other recipes to see which ones come out the best. Too bad this mold won't work with angel food cake--that's the cake I know how to make the best. This train mold was a gift from Williams Sonoma.
